Cupcake #30

here are my cupcakes for the Bake-N-Blog. they are #30 - Coconut Rum Cupcakes with Coconut Cream Cheese Frosting (recipe from Ming Makes Cupcakes). they turned out delicious, but i have learned that i don’t like coconut on my cupcakes (i love coconut flavor, but the actual shredded coconut on top not so much!) i added some fun cupcake wrappers from the etsy store The Cupcakery (from blogger growingupanjwife.com). for photographing purposes i sat the cupcakes up higher on the cupcake wrapper (so you can see the entire top of my cupcakes- and i actually think they look really cute this way too!) i am including a MckLinky for all Bake-N-Blog participants. feel free to add you name so we can take a look at your cupcakes!







and of course, my daughter wanted the blue one!

  5. More perfect looking cupcakes! What did I do wrong?? Even though mine didn't look like the picture, they tasted amazing…and I guess that's all that matters! Love those wrappers!

  8. Your cupcakes are lovely! There's a distinct possibility that I would've passed the time while they baked with the leftover rum and they wouldn't be so pretty. ;)

    i used 1/3 cup coco rum for the cakes and 3 T for the frosting. however i added it last and separated some batter and frosting out for some "non-alcoholic" cakes for my daughter;)

  14. Okay, how delicious do yours look? I think that I would have to agree with you about the shredded coconut, though. It looks like your little one loved them, though.

  15. Lovely photos, especially the one of your little daughter! If you don't like the shredded coconut, try toasting it lightly first – makes all the difference!

I am not a fan of coconut pieces either, I love coconut flavor, but the texture of it freaks me out a little. Even with that, your cupcakes are so pretty.
