rainbow cupcakes







have you ever tried making these? yesterday harper and rex both decided to nap at the same time (AMAZING!) so, i decided to use up the food coloring from the homemade playdough i made over the weekend.

this was so much fun and easy-peasy! the directions:

*mix up a box of white cake mix. preferably a recipe that uses egg whites and oil instead of butter (your colors will come out better and cupcakes will brown less.)
*divide batter into bowls


*add your food coloring. i used McCormick's neon pack for my pink, green, blue, and purple. then i mixed the neon pink with the yellow from the original pack to get my orange. this is really just a guestimate until you get the desired colors.




*line your muffin pan with cupcake wrappers. i used silver cupcake wrappers to make "surprise" cupcakes and white/clear wrappers for the rest of the cupcakes:


*using a fork or spoon drizzle each color on top of the next. i used forks because i found that it gave me more control. do not try to spread the colors out on your own (it will cause your colors to mix).


*purple, blue, green, yellow, orange, pink





bake (as directed on your cake mix-i baked about 21 min.) let cool and frost them if you like.


even the wrapper is pretty!

What type of cake mix did you use? I used the "super moist" betty crocker cake mix and the colors ran together when they baked. I love how your layers stayed separate!

anon, i should have written it down because i don't remember. all i know is that it was the brand on sale that week and it was white cake mix. maybe the "super moist" was to runny?

These are beautiful but I wouldn't feed them to my kids with all the dye in them. Might try a version with natural dyes but won't be able to do the rainbow.

I don't like heavy frostings so i used a whipped cream frosting. i don't have a specific fav recipe, usually i just google it and try something new! shari

So pretty! I'm definitely going to have to try this out the next time I make cupcakes. I've seen people do cakes that turn out looking the same, but involve cooking a bunch of different very skinny cakes, then stacking. I like this method much better!

I made these!! Thank you soo much for this lovely post. I've had alot of down days lately and every time I looked at these cupcakes it made everything better, lol. I used betty crocker super moist mix and had NO issues with the colors running together. They turned out fabulous! I have had nothing but compliments from others. These will be made again and again.
